So those of us who bought the barrels last summer, what have we done with them, are we planning to do with them, and
would you do it again?
I've put two mixed meads through my barrel so far.
1) crannberry cyser with some odds and ends added, then at bottling some hibicus for color and some added complexity
– went in pink, came out the barrel 4 weeks later clear amber
2) a mead that I thought was lacking in interest was the first one in (orange blossom, mesquite, snowberry), and it came
out dark dark amber, with bit hits of whiskey and oak. Left it in too long as the initial barrel occupant, it is now
residing in 1 three gallon carboy, and 2 one gallon jugs as it mellows some more. I might have to back blend some this
with another mead to tone down the oak and whiskey.
Gonna make an Orange Blossom + Buckwheat mead this week to put in the barrel in about 4 weeks.
